ALKALI AND ALKALINE EARTH METAL CONTENT OF EARLY SEASON VEGETABLES OF SOUTHERN SERBIAN REGIONS

ABSTRACT

Concentration of Na, K, Ca and Mg in selected vegetable cultures: spinach (Spinacia
oleracea), lettuce (Lactuca sativa) and parsley (Pertoselinum crispum) were analyzed.
Only edible parts of the above plants were used. Metal content was determined by
inductively coupled plasma optical emission spectrometry (ICP-OES). Thermo
Scientific with Echelle optical design and Charge Injection Device (CID) solid statedetector
was used. Determined concentrations were within intervals: 18.44 – 85.04, 16.4 – 25.1, 2.97 – 5.12 and 1.97 – 2.76 in milligrams per gram of dry sample, for Na, K, Ca
and Mg, respectively.
